  1. Crack the eggs into a bowl, add salt and pepper and beat the mixtuire thoroughly with the whisk.
  2. Add half the butter to a saucepan. Cook over medium heat until the butter starts to foam.
  3. Once the butter foams, pour the egg mixture into the pan.
  4. Immediately being stirring to prevent the eggs from clumping and burning. Break up any lumps.
  5. Keep whisking until the eggs are soft with small and creamy lumps (about a minute).
  6. Remove the pan from heat and add the other half of butter and the cream.
  7. Stir and quickly spoon the eggs into a soft mound on a warm plate.
